How much of a difference will getting a new/ good set of bearings to replace the stock ones in my ansmann virus make?

It depends really. If any are 'gritty' or not rolling smoothly then it'll make a big difference for obvious reasons. But if your just replacing them like-for-like then I'd doubt there'd be any noticeable difference at all.
